This vegan strawberry ice cream recipe is deliciously sweet and creamy, with no eggs required!

Ingredients

  • 13.5 oz canned coconut milk (400g)
  • 2 cups diced strawberries (240g)
  • 1/3 cup sugar or pure maple syrup, or xylitol for sugar free (67g)
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract (optional)

Instructions

  • *If you prefer to use an ice cream maker, see above for those instructions.
    To make the vegan strawberry ice cream recipe without an ice cream machine, stir all ingredients together, reserving a small handful of the diced strawberries. Pour the mixture into ice cube molds, and free. Once frozen, thaw enough for a food processor or blender to easily process. Blend until smooth and creamy. Stir in the strawberries, and enjoy.
