I made these with oat flour, vanilla whey powder, fat free Greek yogurt & coconut oil. Made these into muffins, made about 17 muffins (baked for about 16 min). These are absolutely delicious!!

*this is my first ever comment on a recipe page*

I was very impressed with this recipe! Like many others have mentioned, baking with protein powder makes most cakes and breads super dense. But this recipe was as close to my unhealthy, full of butter and white sugar banana bread.
I chose the below options and it turned out fantastic:
Cookies & crème whey protein powder
White all purpose flour
Greek yogurt
Coconut oil
100% Canadian maple syrup
Baked in a 8×8 nonstick baking dish for 35 minutes

This will be gone before I go to bed

I swear by this recipe, just my favorite banana bread in general plus it has protein!
Here are some things I learned:
-I mix wet and dry ingredients separately,
-i use 3 overripe bananas and ignore the 1 1/2 cup plus 1/2 yogurt; it ends up being sufficiently moist,
-add walnuts and chocolate chips
– cook for 50 mins instead (my oven just tends to be less hot and the middle is never done after 40 mins 🙁
Anyways such a good recipe I just love chocolatecoveredkatie!

If you are accustomed to the taste of low sodium baked goods and do not mind it, you can absolutely decrease the salt added 🙂

That is my question also. I can’t eat saturated fats so oil is out. Hopefully someone who has used water replies.
