I grew up with Irish soda bread but hadn’t had it since going vegan six years ago. I made this for St. Patrick’s Day breakfast and it was so good that I just made it again last night. Thank you for this recipe!

Never mind the folklore (to either let the fairies out or ward off evil) but cutting a cross into it helps the bread release the gas formed by the buttermilk mixture (needed even more in yeasted breads) so it doesn’t “blow out” making a crack or hole in the middle or side of the loaf. It’s best done with a serrated knife (that Cutco one to the left of the bread in a couple of your photos would be perfect.) Or is the dough too ‘wet’ or loose before baking?
